Grandma Hiller's Double Bread

Makes 2 loaves

Ingredients

  • -- 1 1/2 cups boiling water

  • -- 1 cup rolled oats

  • -- 1/3 cup vegetable oil

  • -- 1/2 cup molasses

  • -- 1 tbsp salt

  • -- 2 packages yeast

  • -- 1/2 cup warm water

  • -- 2 eggs

  • -- 2 1/2 cups whole wheat flour

  • -- 3 cups white flour


Instructions

Preheat the oven to 350°F. Combine the water, oats, oil, molasses and salt in a large bowl, mix until blended and cool to lukewarm. Then add 2 packages of yeast dissolved in 1/2 C warm water and mix well. Combine the eggs and flours with the oats / molasses / yeast mixture, cover and let stand 15 minutes. Then shape into 2 loaves and let rise until double (about 2 hours). Bake for about an hour (this is a high altitude amount of time — it may take less time elsewhere).
