Jayhawk Bread

Also known as Kansas Brown Bread, this recipe is from Grandma Irene Hammer.

Ingredients

  • -- 1 cup raisins

  • -- 1 tbsp water

  • -- 2 cups unbleached flour

  • -- 2 cups whole wheat flour

  • -- 2 tsp baking soda

  • -- 1 tsp salt

  • -- 1 cup brown sugar (packed)

  • -- 2 cups buttermilk

  • -- 1/2 cup molasses


Instructions

Preheat the oven to 350°F. Put raisins and water in small saucepan; cover and bring to a boil. Remove from heat and let the raisins steam while mixing other ingredients. First combine all dry ingredients then stir in buttermilk and molasses. Stir in raisins (use just the raisins for a drier bread, use water and raisins for a moist bread). For pans, use cans (for example soup cans or 1 lb. coffee cans). Grease cans or use spray oil. Fill no more than 1/2 full of batter. Bake for 1 hour or until done. Remove from cans, wrap and freeze if desired.
