Grandma Hiller's No-Knead Sweet Rolls
You can use this recipe for dinner rolls, cinnamon rolls (see below), or braided coffee cakes.
Makes 3 dozen dinner rolls
Ingredients
-- 1/3 cup shortening
-- 3 tbsp sugar
-- 1 tbsp salt
-- 1 cup scalded milk (very hot but not boiling; should have a foam on top), cool it to lukewarm by adding 1 cup water
-- 2 packages yeast, dissolved as directed, using some of the milk-water from above
-- 2 eggs, beaten
-- 6 1/2 cups all-purpose flour
Instructions
Blend first five ingredients. Combine with beaten eggs and the flour. Let stand 15 minutes covered. Shape and let rise 1 hour. May be chilled before rising (can chill 2 hours to 2 days). For rolls, bake at 400°F for 15–20 minutes. For gooey cinnamon rolls, roll out dough and spread with butter, then sprinkle with cinnamon. Roll up and cut. Let rise. If desired, before placing rolls in pan, mix 1/2 C brown sugar melted with 1/2 C butter, and chopped nuts. Bake at 375°F for 25 minutes.
