Zucchini Bread

Makes 2 loaves

Ingredients

  • -- 3 beaten eggs

  • -- 2 cups sugar

  • -- 1 cup oil

  • -- 2 cups grated zucchini

  • -- 3 cups flour (try part whole wheat!)

  • -- 1 tsp baking soda

  • -- 1/2 tsp baking powder

  • -- 1 tsp salt

  • -- 2 tsp cinnamon

  • -- 3 tsp vanilla


Instructions

Preheat the oven to 350°F. Grease and line two large loaf pans with parchment or foil. Mix wet ingredients in one bowl. Mix dry ingredients in another. Add dry ingredients to wet, don’t overmix! Pour into the loaf pans and bake for 1 to 1 1/4 hours. Let cool in pans for 10 minutes, then remove from pans.
