Apple Dapple Cake
Ingredients
-- 1 1/2 cups pecans
-- 3 eggs
-- 1 1/2 cups vegetable oil
-- 3 cups flour
-- 2 cups sugar
-- 1 tsp salt
-- 1 cup brown sugar (for sauce)
-- 3 cups chopped apples
-- 1/4 cup milk (for sauce)
-- 2 tsp vanilla
-- 1 tsp baking soda
-- 1/2 cup margarine or butter (for sauce)
Instructions
Preheat the oven to 350°F and grease a 10 1/2" x 15" pan. Mix the first four ingredients together. Sift together the flour, salt and baking soda and add to the oil sugar egg mixture. Fold in the pecans and chopped apples, and pour into the pan. Bake for about 40 minutes or until a toothpick inserted in the center comes out clean. To make the sauce, bring the brown sugar, milk and butter to a boil and cook for three minutes. Pour over the warm cake and let soak for 2 hours before serving. This cake freezes well. Note: if you don’t have a 10 1/2” x 15” inch pan, you can use a 9” x 13” pan and bake the cake a little longer. You might be able to use two 9” round cake pans, although I haven’t tried this.
