Grandma DuChateau's Carrot Cake

Ingredients

  • -- 4 eggs

  • -- 1 tsp salt

  • -- 2 tsp baking soda

  • -- 2 cups cake flour

  • -- 1 lb powdered sugar (for frosting)

  • -- 1/2 cup chopped walnuts

  • -- 1 1/2 cups vegetable oil

  • -- 3 cups finely grated raw carrots

  • -- 8 oz cream cheese (for frosting)

  • -- 1/2 cup room temp butter or margarine (for frosting)

  • -- 2 tsp cinnamon

  • -- 2 cups white sugar


Instructions

Preheat the oven to 350°F and grease a 9" x 13" baking pan. Mix the first seven ingredients together in a large bowl. Beat in vegetable oil. Then beat in the eggs, one at a time. Bake for 40–45 minutes or until a toothpick in center comes out clean. Meanwhile, make the frosting by beating together the butter, cream cheese and powdered sugar until light and fluffy. When the cake is cool, frost. This recipe can be cut in half to make a smaller cake. The cake also freezes well.
