Peanut Butter Cake
Makes 2 loaves
Ingredients
-- Chopped peanuts (garnish)
-- 1/4 cup milk
-- 3/4 cup chocolate syrup
-- 8 oz semi-sweet baking chocolate, chopped (not chocolate chips, as they contain wax)
-- 2 1/2 cups creamy peanut butter
-- 1 cup powdered sugar
-- 1 package regular yellow cake mix (preferably Duncan Hines)
Instructions
Preheat oven to 350°F and grease and flour 2 9-inch layer cake pans. Prepare the cake mix according to box directions, beating in 1/2 C peanut butter. Bake and cool completely. Icing: Combine syrup and semi-sweet chocolate in heavy small saucepan. Stir over medium heat until chocolate is melted. Transfer to a large bowl. Stir in the remaining 2 C peanut butter, then powdered sugar, then milk. Stir until smooth. Fill and frost the layer cake. Garnish with chopped peanuts.
