Butter Cookies

Ingredients

  • -- 4 cups flour

  • -- 2 cups room temperature butter

  • -- 1/4 cup cherry or maraschino cherry juice (for frosting)

  • -- 1 tbsp almond extract

  • -- 1 cup sugar

  • -- Powdered sugar (as much as necessary)

  • -- 2 eggs

  • -- 1/4 cup room temperature butter (for frosting)


Instructions

Preheat oven to 350°F. Cream butter and sugar. Add half of the flour and both eggs; mix. Combine with remaining flour and extract. Roll into a log and wrap in wax paper. Refrigerate at least overnight. Slice and bake for 10–12 minutes, just until barely beginning to get golden. The cookies should not be browned. Once cooled, combine the frosting ingredients—using enough powdered sugar to make a frosting thick enough that it will not run. Frost the cookies.
