Dad's BBQ Sauce
A LOT of sauce
Ingredients
-- 1 quart tomato paste
-- 1/4 cup lemon juice
-- 3/4 tbsp salt
-- 1/4 cup molasses
-- 1/4 tbsp red pepper flakes
-- 1/4 cup cider vinegar
-- 3/4 tbsp ground black pepper
-- 1/4 tbsp ground cumin
-- 1/4 tbsp ground cloves
-- 1 large onion, sliced
-- 1/4 tbsp sweet basil
-- 4 oz liquid smoke
-- 1/4 cup bacon or ham drippings
-- 1 quart ketchup
-- 1/2 tbsp garlic powder
-- 1/8 tbsp ground ginger
-- 1/4 tbsp cinnamon
-- 1/2 tbsp (~2 leaves or 1/4 tbsp powdered) bay leaves
-- 1/4 tbsp dry rosemary
-- 1/2 cup brown sugar
-- 1/4 tbsp ground thyme
-- 3/4 cup Worcestershire sauce
Instructions
Bring 2 1/2 qts of water to a boil. Add the first three ingredients and simmer for 1 hour, then remove spices and onions. While the above is simmering prepare the rest of the ingredients. Add the simmered spiced water to the above mixture in a large (at least 6 qt) heavy pot or dutch oven and bring to a boil. Reduce heat and simmer for at least one hour at a low heat. If the sauce is too thick or spicy, dilute with water. This recipe makes A LOT of sauce!
