Dad's BBQ Sauce

Ingredients

  • -- 1 quart tomato paste

  • -- 1/4 cup lemon juice

  • -- 3/4 tbsp salt

  • -- 1/4 cup molasses

  • -- 1/4 tbsp red pepper flakes

  • -- 1/4 cup cider vinegar

  • -- 3/4 tbsp ground black pepper

  • -- 1/4 tbsp ground cumin

  • -- 1/4 tbsp ground cloves

  • -- 1 large onion, sliced

  • -- 1/4 tbsp sweet basil

  • -- 4 oz liquid smoke

  • -- 1/4 cup bacon or ham drippings

  • -- 1 quart ketchup

  • -- 1/2 tbsp garlic powder

  • -- 1/8 tbsp ground ginger

  • -- 1/4 tbsp cinnamon

  • -- 1/2 tbsp (~2 leaves or 1/4 tbsp powdered) bay leaves

  • -- 1/4 tbsp dry rosemary

  • -- 1/2 cup brown sugar

  • -- 1/4 tbsp ground thyme

  • -- 3/4 cup Worcestershire sauce


Instructions

Bring 2 1/2 qts of water to a boil. Add the first three ingredients and simmer for 1 hour, then remove spices and onions. While the above is simmering prepare the rest of the ingredients. Add the simmered spiced water to the above mixture in a large (at least 6 qt) heavy pot or dutch oven and bring to a boil. Reduce heat and simmer for at least one hour at a low heat. If the sauce is too thick or spicy, dilute with water. This recipe makes A LOT of sauce!
