Hot German Potato Salad
Ingredients
-- 1/2 tsp celery seed
-- 1 onion, sliced
-- 1/3 cup vinegar
-- 6 strips bacon, chopped
-- 1 1/2 tsp salt
-- 1 1/2 lbs potatoes, cooked until almost done, then cubed (no need to peel them if you use red or Yukon gold potatoes)
-- 3 tsp sugar
-- 2 tsp flour
-- 1/2 cup water
-- chopped parsley
-- 1/4 tsp black pepper
Instructions
Fry the bacon, saving 1/3 C of the bacon grease. Brown the sliced onion for 2 minutes in the grease, then add the vinegar, water, flour, sugar, salt and pepper, celery seed, and parsley. Cook until thick, then add the cubed potatoes and heat through. Serve.
