Hot German Potato Salad

Ingredients

  • -- 1/2 tsp celery seed

  • -- 1 onion, sliced

  • -- 1/3 cup vinegar

  • -- 6 strips bacon, chopped

  • -- 1 1/2 tsp salt

  • -- 1 1/2 lbs potatoes, cooked until almost done, then cubed (no need to peel them if you use red or Yukon gold potatoes)

  • -- 3 tsp sugar

  • -- 2 tsp flour

  • -- 1/2 cup water

  • -- chopped parsley

  • -- 1/4 tsp black pepper


Instructions

Fry the bacon, saving 1/3 C of the bacon grease. Brown the sliced onion for 2 minutes in the grease, then add the vinegar, water, flour, sugar, salt and pepper, celery seed, and parsley. Cook until thick, then add the cubed potatoes and heat through. Serve.
